Gross weight Vs. Net Weight
Have you noticed how commercial beef from supermarkets shrinks nearly in half when cooked!
Or after you defrost meat from the freezer, you often find water left in the bowl!
This is because commercial beef is full of fluids.
Beef purchased from supermarkets likely to end up with an actual fraction of that weight as net weight.
Florida Beef Farms on the other hand only offers dry aged beef.
- Aging, by placing beef in cold storage just above freezing temperature with high airflow reducing level of liquids in the flesh.
This process makes the beef very tender and less “chewy”.
Commercial beef is not aged, or only aged for a short time often under 12 hours to maximize retail weight.

1200 pounds Gross weight may equal to 700 – 750 lbs take home / net weight
1000 pounds Gross weight may equal to 550 – 600 lbs take home / net weight
800 pounds Gross weight may equal to 400 – 450 lbs take home / net weight
